Casserole"},"content":{"rendered":"<p>Cauliflower is not one of my favorite foods. &nbsp;I am definitely not a picky eater, in fact, I can probably count on one hand the foods that I absolutely won&#8217;t eat. &nbsp;When my kids were a lot younger, I decided to go all &#8220;southern girl&#8221; and make up a casserole recipe with cauliflower in it that they would (hopefully) eat. &nbsp;It worked for most of them and actually ended up being my one of my oldest daughter&#8217;s favorites. &nbsp;In fact, on cooking day for the blog, she came over and said &#8220;I love this and you haven&#8217;t made it in forever!&#8221; &nbsp;<\/p>\n<p>For some reason, this dish reminds me of fall, so I thought I would share. &nbsp;If you or someone you love doesn&#8217;t love cauliflower, maybe this will work for you too! &nbsp;<\/p>\n<p>Start out by cutting a whole head of cauliflower. &nbsp;You can leave it in pretty big pieces at this point because you are going to cook it and then it will be super easy to chop.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-1021\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2017\/09\/IMG_4182.jpg?resize=300%2C200&#038;ssl=1\" alt=\"\" width=\"300\" height=\"200\"><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>I just put it in boiling water until it was pretty tender, but you could also steam it if you prefer.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-1020\" height=\"200\"><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Once it&#8217;s tender, (just stick a fork or knife in it and if it goes in easily, it&#8217;s ready) drain it and then roughly chop it into small pieces. &nbsp;This is how mine looked at this point.&nbsp;<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" height=\"200\"><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Put the chopped cauliflower into a casserole dish and add one cup of cooked rice.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-1018\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2017\/09\/IMG_4190.jpg?resize=228%2C300&#038;ssl=1\" alt=\"\" width=\"228\" height=\"300\"><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Next, add about a cup of sour cream, a can of chopped green chiles, and anywhere between 1-2 cups of grated cheese. &nbsp;You can use any kind of cheese you want. &nbsp;I used Mexican, but you can use cheddar or mozzarella, or a combination. &nbsp;Just use whatever kind of cheese sounds good to you! &nbsp;I also added a chopped jalapeno because I and my family are crazy about lots of flavor and spice. &nbsp;This is totally optional. &nbsp;The chiles don&#8217;t really give it heat, but they add lots of flavor.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-1016\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2017\/09\/IMG_4206.jpg?resize=232%2C300&#038;ssl=1\" alt=\"\" width=\"232\" height=\"300\"><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>I mixed cheese into the mixture and then also
