{"id":1265,"date":"2018-07-23T13:59:52","date_gmt":"2018-07-23T18:59:52","guid":{"rendered":"http:\/\/www.mamapalma.com\/?p=1265"},"modified":"2022-06-21T19:07:47","modified_gmt":"2022-06-21T19:07:47","slug":"summertime-dip","status":"publish","type":"post","link":"https:\/\/www.mamapalma.com\/?p=1265","title":{"rendered":"Healthy Summertime Veggie Dip"},"content":{"rendered":"\n<p>This healthy summertime veggie dip is flavorful, easy to put together, and perfect for any gathering!<\/p>\n\n\n\n<p>I hope you are enjoying summer!&nbsp; Here&#8217;s a great recipe that is good all year round, but to me, it&#8217;s especially good in the summertime.&nbsp; It&#8217;s light and healthy and full of flavor.&nbsp; I&#8217;ve seen lots of variations on this recipe and I&#8217;ve heard it called lots of different things as well.&nbsp; Some people use black eyed peas instead of black beans. In my opinion, you could also use chick peas. It is sometimes called &#8220;texas caviar&#8221;. I&#8217;ve just always called it &#8220;summertime dip&#8221;, because that&#8217;s what it seems like in my head.&nbsp; I thought I&#8217;d share my version of this super simple recipe.<\/p>\n\n\n\n<p>For my version, you&#8217;ll need a can of black beans, a can of corn, a can of rotel, green onions, green and red bell peppers, jalapeno, fresh cilantro and a bottle of Zesty Italian dressing.&nbsp;<\/p>\n\n\n\n<p>You aren&#8217;t going to believe how easy this is.&nbsp; First, drain and rinse the black beans and corn.&nbsp; Next, chop up the peppers, onions and cilantro.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignleft\"><img data-recalc-dims=\"1\" height=\"300\" width=\"200\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2018\/06\/IMG_5269.jpg?resize=200%2C300&#038;ssl=1\" alt=\"\" class=\"wp-image-1251\"\/><\/figure>\n<\/div>\n\n<div class=\"wp-block-image\">\n<figure class=\"alignleft\"><img data-recalc-dims=\"1\" height=\"300\" width=\"200\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2018\/06\/IMG_5275.jpg?resize=200%2C300&#038;ssl=1\" alt=\"\" class=\"wp-image-1252\"\/><\/figure>\n<\/div>\n\n\n<p>Then throw it all into a bowl, along with the can of Rotel.  If there are other things you would like to add to it &#8211; go for it!  I think it would be perfect with some diced avocado.  You can also add orange, yellow or red bell peppers.  A little lime juice would also add extra flavor.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignleft\"><img data-recalc-dims=\"1\" height=\"200\" width=\"300\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2018\/06\/IMG_5276.jpg?resize=300%2C200&#038;ssl=1\" alt=\"\" class=\"wp-image-1253\"\/><\/figure>\n<\/div>\n\n\n<p>Now add the Italian dressing.&nbsp; I usually add between 1\/2-3\/4 of a cup.&nbsp; Stir it all up and then put it in the fridge for a couple of hours to let all the flavors blend together.<\/p>\n\n\n\n<p>Serve with tortilla chips.&nbsp; I think Tostitos scoops are the perfect chip for this.  You could also use Fritos scoops.
