{"id":2511,"date":"2016-08-10T11:16:17","date_gmt":"2016-08-10T16:16:17","guid":{"rendered":"http:\/\/www.mamapalma.com\/?p=184"},"modified":"2021-09-17T20:11:54","modified_gmt":"2021-09-17T20:11:54","slug":"thai-quinoa-bowl","status":"publish","type":"post","link":"https:\/\/www.mamapalma.com\/?p=2511","title":{"rendered":"Thai Quinoa Bowl"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>Some friends of mine are on a Daniel fast right now, so I decided to try to come up with a good recipe that would be helpful for them. &nbsp;In case you don&#8217;t know, a Daniel fast means that you only eat fruits, vegetables, whole grains, nuts, seeds, oils and spices. To give credit where it is due, I have to say that I had some serious help in the test kitchen with the dressing. My daughters, Ashleigh and Kathryn, and my niece, Elise, helped me figure it all out and I think you will like the result.<\/p>\n<p>Cook the quinoa according to the directions on the package. The amount of quinoa you make just depends on how many servings you want. I was trying to figure out what all would make this be a Thai flavor, so here\u2019s what I used. I chopped up red peppers, green onions, red onion, cilantro, and broccoli. I also chopped some peanuts. &nbsp;You can omit any of the vegetables I used or add anything else that sounds good to you!<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-187\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2016\/08\/thaiquinoa3.jpg?resize=300%2C200&#038;ssl=1\" alt=\"thaiquinoa3\" width=\"300\" height=\"200\"><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Lastly, I julienne sliced some carrots. &nbsp;I have this tool to get the cool looking julienne slice pretty easily. &nbsp;Click<a href=\"https:\/\/www.pamperedchef.com\/pws\/mtedeschi\/shop\/Cook%27s+Tools\/Graters%2C+Peelers+%26+Grinders\/Julienne+Peeler\/1073\"> here<\/a> if you want more information on this handy dandy tool!<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-194 aligncenter\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2016\/08\/thaiquinoa8.jpg?resize=300%2C200&#038;ssl=1\" alt=\"thaiquinoa8\" width=\"300\" height=\"200\"><\/p>\n<p>&nbsp;<\/p>\n<p>The dressing was the juice and zest of a half of a lime, 2 T sesame oil, a splash of sweet chili oil, a clove of minced garlic, fresh grated ginger (to taste), but I used about a half of a teaspoon. You can use ground ginger if you want \u2013 or leave it out if you want. Next, I added two teaspoons of soy sauce and 2 teaspoons of orange juice for sweetness. I think rice wine vinegar might be great in this too, but I didn\u2019t have any, so I didn\u2019t use it. In fact, it would be fun to make this, set it up \u201ctaco bar\u201d style, and let everyone assemble their own! Drizzle as much or little dressing as you want. This ended up tasting really good!
