{"id":265,"date":"2016-09-19T17:54:12","date_gmt":"2016-09-19T22:54:12","guid":{"rendered":"http:\/\/www.mamapalma.com\/?p=265"},"modified":"2022-06-21T19:12:41","modified_gmt":"2022-06-21T19:12:41","slug":"loaded-potato-soup","status":"publish","type":"post","link":"https:\/\/www.mamapalma.com\/?p=265","title":{"rendered":"Best Ever Loaded Potato Soup"},"content":{"rendered":"\n<p>This loaded potato soup is creamy and delicious and perfect for a cold night.&nbsp; It&#8217;s definitely a comfort food. &nbsp;I started making this when my oldest daughter was little because she liked (and still does) potatoes in any form.&nbsp; &nbsp; &nbsp;Serve it with <a href=\"https:\/\/www.mamapalma.com\/buttermilk-cornbread\/\">cornbread<\/a> and it absolutely feels like fall.  I always top it with more cheddar, bacon bits, and green onions to make it taste like a loaded baked potato. As well as being delicious, this soup comes together pretty quickly and is a great weeknight meal.<\/p>\n\n\n\n<p>You&#8217;ll need: &nbsp;About 8 potatoes, peeled and cubed.<\/p>\n\n\n\n<p>2 carrots, peeled and sliced<\/p>\n\n\n\n<p>1 stalk celery, sliced<\/p>\n\n\n\n<p>1 small onion, chopped<\/p>\n\n\n\n<p>4 cups chicken broth<\/p>\n\n\n\n<p>4 cups milk<\/p>\n\n\n\n<p>1\/4 c flour<\/p>\n\n\n\n<p>2 cups cheddar cheese, grated<\/p>\n\n\n\n<p>green onions and bacon bits for garnish<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignleft\"><img data-recalc-dims=\"1\" height=\"200\" width=\"300\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2016\/09\/potatosoup2.jpg?resize=300%2C200&#038;ssl=1\" alt=\"potatosoup2\" class=\"wp-image-267\"\/><\/figure>\n<\/div>\n\n\n<p>First, peel and chop the potatoes, carrots, onion and celery. &nbsp;<\/p>\n\n\n\n<p>Next, put the broth in a dutch oven or stock pot and heat at medium high heat. &nbsp;Add all the vegetables and bring to a boil. &nbsp;Once it&#8217;s boiling, let it cook for about 10 minutes or until the vegetables are starting to get tender. &nbsp;Don&#8217;t overcook them at this point because they will keep cooking as you add the other ingredients.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"alignleft\"><img data-recalc-dims=\"1\" height=\"200\" width=\"300\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2016\/09\/potatosoup4.jpg?resize=300%2C200&#038;ssl=1\" alt=\"potatosoup4\" class=\"wp-image-269\"\/><\/figure>\n<\/div>\n\n\n<p>While the vegetables are cooking, put  the milk and flour into some type of container with a tight fitting lid and shake it. &nbsp;Give it a good minute or so of shaking.
