{"id":768,"date":"2017-02-06T11:56:19","date_gmt":"2017-02-06T17:56:19","guid":{"rendered":"http:\/\/www.mamapalma.com\/?p=768"},"modified":"2021-09-17T19:40:37","modified_gmt":"2021-09-17T19:40:37","slug":"bruschetta","status":"publish","type":"post","link":"https:\/\/www.mamapalma.com\/?p=768","title":{"rendered":"Bruschetta"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>I almost didn&#8217;t post this recipe because it seems ridiculously simple, but I have experimented with this a lot and think that it&#8217;s worth sharing. &nbsp;Bruschetta (pronounced BRU-SKETTA) is its very best in the summer when you have fresh tomatoes and basil, but sometimes you just need to make it in the winter.<\/p>\n<p>Bruschetta has the basis of all things Italian &#8211; good bread, olive oil, tomatoes, basil and garlic.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-781\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2017\/02\/IMG_3141.jpg?resize=300%2C200&#038;ssl=1\" alt=\"IMG_3141\" width=\"300\" height=\"200\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-780\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2017\/02\/IMG_3143.jpg?resize=200%2C300&#038;ssl=1\" alt=\"IMG_3143\" width=\"200\" height=\"300\"><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>You&#8217;ll need: &nbsp;a loaf of French or Italian bread, about 6 ripe tomatoes (I used Roma for this), 2 cloves of minced garlic, 1 T extra virgin olive oil, 1 t balsamic vinegar, 6 to 8 basil leaves (torn), salt and pepper to taste, and more olive oil for the bread.<\/p>\n<p>This is how I prepare the tomatoes. &nbsp;You don&#8217;t have to do it this way, you can just chop the tomatoes up as they are, but I just like to get the skins off. &nbsp;To do that, I boil some water, then as soon as it starts to boil, I take it off the heat and put the tomatoes in the water for one minute. &nbsp;Just one minute.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-778\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2017\/02\/IMG_3149.jpg?resize=300%2C200&#038;ssl=1\" alt=\"IMG_3149\" width=\"300\" height=\"200\"><\/p>\n<p>This allows you to easily pull the skins right off.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-777\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2017\/02\/IMG_3151.jpg?resize=300%2C219&#038;ssl=1\" alt=\"IMG_3151\" width=\"300\" height=\"219\"><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Now, chop the tomatoes into smaller pieces. &nbsp;Add olive oil, vinegar, basil, garlic, salt and pepper. &nbsp;Mix it all up.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-776\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2017\/02\/IMG_3158.jpg?resize=300%2C200&#038;ssl=1\" alt=\"IMG_3158\" width=\"300\" height=\"200\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-774\" src=\"https:\/\/i0.wp.com\/www.mamapalma.com\/wp-content\/uploads\/2017\/02\/IMG_3167.jpg?resize=300%2C209&#038;ssl=1\" alt=\"IMG_3167\" width=\"300\" height=\"209\"><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Preheat oven to 450.
