Bailey’s Irish Cream Brownies

I love to make themed meals.  A few years ago, I was hosting a St. Patrick’s Day dinner and was looking for Irish dessert recipes when I came across this recipe for Bailey’s Irish Cream Brownies.  I made them for that meal and have made them many times since then and not just for St. Patrick’s Day. They are cake like brownies made with Bailey’s Irish Cream in the batter and in the frosting and they are incredible!  

I’ve honestly never met a brownie I didn’t like.  I like the fudgy ones and I like the cakey ones.  They are delicious with frosting and delicious without frosting.  I also love that you can add whatever to them to make them different.  For example, you can add peanut butter chips, butterscotch chips, chocolate chips, caramel, or all of the above.  Top them with sprinkles before you bake to make them feel festive. In addition, you can serve them with ice cream. They are one of my favorite sweet treats.  So, this recipe just makes me happy.  

You’ll need:  sweetened cocoa powder, all purpose flour, baking powder, salt, sugar, butter, eggs and Bailey’s Irish Cream Whiskey.  For the frosting:  butter, powdered sugar, cocoa powder and Bailey’s.

Preheat oven to 350.  First, whisk together the dry ingredients and set them aside.  Whisking the dry ingredients together is similar to sifting.  It aerates the flour and it also combines the dry ingredients perfectly.

 

 

 

 

 

 

Mix together the sugar and melted butter with a hand mixer.  Next, add the eggs and Bailey’s and mix well.

 

 

 

 

 

 

 

 

Now slowly add the dry ingredients while mixing.

 

 

 

 

 

 

 

 

Spray a 9×9 pan with non-stick cooking spray and spoon in the batter.  It will be thick.  Spread evenly.

 

 

 

 

 

 

Bake for about 30 minutes.  Now while they are cooling, make the frosting by creaming together the butter and sugar, then add the Bailey’s and cocoa powder.  Spread onto cooled brownies.

Finally, gather your people, put on your green and enjoy these lovely Irish Cream Brownies!  You might even want to dance a jig!

Cake like brownies with Bailey's Irish Cream in the batter and in the frosting

Ingredients

  • Brownies:
  • 1/2 c cocoa powder
  • 1 c all purpose flour
  • 1 t baking powder
  • 1/4 t salt
  • 1 c sugar
  • 1/2 c melted butter
  • 2 eggs
  • 1/2 c Bailey's Irish Cream Whiskey
  • Frosting:
  • 1/2 c butter, softened
  • 1 1/2 c powdered sugar
  • 2 T Bailey's Irish Cream Whiskey
  • 2 T cocoa powder

Instructions

Preheat oven to 350. Spray a 9x9 pan with non-stick cooking spray.

Mix dry ingredients together. Whisk and set aside.

Using a hand mixer, mix sugar and melted butter. Add egg and Bailey's. Mix well.

Slowly add dry ingredients while mixing. Spread batter evenly into prepared pan.

Bake 30 minutes.

To make frosting: Combine butter and powdered sugar, add Bailey's and cocoa powder. Mix well.

Spread frosting onto cooled brownies.
