Pork Tenderloin with Balsamic Glaze

Pork tenderloin with balsamic glaze is a great entree to pair with spring veggies or au gratin potatoes. This would be a perfect Easter meal!

It’s springtime in Tennessee, which means all the flowers are starting to bloom and the leaves are coming back to the trees. I always start thinking about seasonal meals and this is one that I make pretty often, especially in the spring.

This is just one of those dishes that feels like springtime to me. Especially paired with this spring vegetable stir fry or scalloped potatoes with caramelized onions. This could be an alternative to ham for a lovely Easter dinner.

Here’s what you’ll need:

  • 1 1/2-2 lbs pork tenderloin
  • 1/3 c brown sugar
  • 2 cloves garlic, minced
  • 2 T soy sauce
  • 2 T balsamic vinegar
  • 1/8 t crushed red pepper flakes
  • 1/4 t smoked paprika

Preheat the oven to 425. Line a baking sheet with foil and lightly spray the foil with non stick cooking spray.

Pat the tenderloin dry. Whisk all the ingredients together. Pour the glaze mixture all over the pork, then using tongs, turn the pork over and over to coat on all sides with the glaze.

Bake for 40-45 minutes, using the tongs to turn the pork over every 10 minutes. You just want to keep coating the meat with the glaze.

I usually switch the oven to broil for the last 3 minutes to crisp it up a little bit. Remove from oven and let it rest for about 5 minutes before slicing

Drizzle all the extra glaze onto the pork once you plate it. If you are serving it with the spring vegetables, pour some of the glaze onto them too.

This is such a beautiful dish in addition to being delicious. Look at these beautiful colors!
