Irish Tea Cake with Berries and Cream

I am all about celebrating all the holidays and often just a Tuesday – really just any excuse to have a party and/or a cake. I’ve made this Irish Tea Cake for the past few years for St. Patrick’s Day.  It’s light and not too sweet and it looks and tastes delicious – especially with the addition of fresh berries and whipped cream.  This cake reminds me of southern “tea cakes” and I absolutely love it!  

If you don’t love baking, this cake might be perfect for you.  It doesn’t have a lot of ingredients and it’s very easy to prepare.  But you can dress it up with berries and whipped cream and it looks like you spent a lot of time and effort.  

You’ll need:  All purpose flour, butter, sugar, eggs, vanilla, baking powder, salt, and milk.  Fresh berries and whipped cream to garnish.  Full recipe below.

The first step is to make sure the butter is room temperature. Then beat the butter and sugar together until it’s light and fluffy. This will take 2 or 3 minutes.  Next, beat in the eggs one at a time, mixing until fully incorporated.  Stir in vanilla.  

 

 

 

 

 

 

 

 

In a separate bowl, whisk together the flour, baking powder and salt.  Now alternately stir in a little flour, then a little milk until both are added.  Start and end with the flour mixture.  

 

 

 

 

 

 

 

 

Spread the batter evenly into the greased cake pan.  Bake for 25-30 minutes or until a toothpick comes out clean.  Cool for about fifteen minutes in the pan.  Invert the cake pan onto a plate or cake stand.  Once it’s completely cooled, sprinkle powdered sugar on top, then garnish with berries and whipped cream.  In my opinion, raspberries are perfect for this, but you can certainly use any berry you like!

Ingredients

  • 1/2 c butter, softened
  • 1 c sugar
  • 2 eggs
  • 2 t vanilla extract
  • 1 3/4 c all purpose flour
  • 2 t baking powder
  • 1/2 t salt
  • 1/2 c milk
  • powdered sugar for dusting
  • Fresh berries and whipped cream for garnish

Instructions

Preheat oven to 350. Grease a 9 inch cake pan.

Cream together butter and sugar until light and fluffy.

Add eggs one at a time and mix until fully incorporated.

Stir in vanilla.

In separate bowl, combine flour, salt and baking powder. Alternately add flour mixture and milk, stirring until incorporated. Start and end with flour mixture.

Bake for 30-35 minutes or until toothpick inserted comes out clean.

Cool in pan for 15 minutes. When completely cooled, dust the top with powdered sugar.

Serve with berries and whipped cream.
