Simple Buffalo Chicken Salads

Need a quick and healthy weeknight dinner? These simple buffalo chicken salads have been in my meal rotation for years. They are so easy to put together and they are definitely not lacking in flavor.

You’ll need:

  • For four servings, I would recommend 2 chicken breasts or 5-6 chicken tenders
  • Any kind of salad greens you like
  • Celery
  • Shredded or sliced carrots
  • Green or red peppers, diced
  • Ranch or Blue Cheese dressing
  • 1 T vegetable or canola oil
  • 1 T butter
  • 2 T Frank’s Hot Sauce (more if you like spice – I usually use 3 T)

First, you’ll need to prepare the chicken. Cut the breasts or tenders into bite size pieces. Then heat the oil and butter together in a skillet on medium heat until the butter is melted and starting to sizzle a little. Now add the chicken pieces and cook them until they are no longer pink and starting to brown a little.

Finally, add the hot sauce and stir until all the chicken is fully coated. Turn the heat down to low and just let it simmer and soak up all the flavor. I always use 3-4 T of hot sauce, but we like it really spicy, so I’m saying 2. But feel free to add more if you can handle the heat!

While the chicken is simmering, you can assemble your salads. You can do one big salad and just put all the toppings and chicken all together if you like. Or, you can make individual salads and let each person add the toppings and amount of chicken they want.

I usually do a mix of hearts of romaine and spring mix, but you can use any and all types of greens you want. Then I top it with thin slices of celery, diced red and green peppers, and shredded carrots. In addition, you can add any kind of salad toppings or other veggies that you prefer.

The last step is to remove the chicken from the pan with a slotted spoon and add it to the salad. Then drizzle ranch or blue cheese dressing on top and enjoy!

Ingredients

  • 2 boneless, skinless chicken breasts or 5-6 boneless, skinless tenders

  • Thinly sliced celery
  • Diced red and green bell peppers
  • Shredded or thinly sliced carrots
  • Ranch or Blue Cheese Salad Dressing

Instructions

Cut the chicken into bite size pieces

Heat the oil and butter together in a skillet over medium heat

Add the hot sauce and stir to coat every piece

Turn heat down to simmer while you prepare the salad

Assemble one large salad with celery and all the other toppings or individual so that everyone can assemble their own

Remove chicken from the skillet with a slotted spoon and add to the top of the salads, then drizzle with ranch or blue cheese dressing
