Mama Palma’s Best Chicken Salad

Chicken salad full of grapes, pecans and celery is perfect for any occasion. Serve on bread, croissants or crackers and watch it disappear.

There are just so many varieties of chicken salad and I am here for it. This is my basic recipe, but sometimes I add different things depending on my mood or what I happen to have on hand. For years I thought I hated chicken salad, but then I realized that the only kind I had ever tried was a grocery store brand that just didn’t taste good. So I decided to make my own and see if I liked it. Turns out I love chicken salad!

Here’s my basic recipe, but again, you can adapt and add different things if you want. I use grapes, but you could also use apples. Typically, I use pecans, but walnuts are also delicious in it. If you are making this for a special occasion like a shower or some other party, I would double or even triple this recipe.

You’ll need:

  • 2 cups cooked, shredded chicken (you can use rotisserie chicken if you want)
  • 1/4 c thinly sliced celery
  • 1/2 c mayonnaise (I used Hellmann’s olive oil mayo)
  • 1/2 c sour cream
  • 1 t Lawry’s seasoned salt
  • 1/2 c each of pecan pieces and red grapes, cut into fourths

Now, some people like their chicken salad a bit creamier and some like it a bit “drier” if you will. So, my suggestion would be to add the chicken, celery, pecans and grapes to a bowl and then add half the mayo and half the sour cream and mix it all up. See if that consistency seems good to you. If not, add the rest and stir until mixed.

Finally, season with Lawry’s seasoned salt. This really gives the chicken salad so much added flavor. Don’t leave this ingredient out!

Creamy chicken salad bursting with grapes and pecans

Ingredients

  • 2 c chicken, cooked and shredded (can use rotisserie chicken)
  • 1/4 c thinly sliced celery
  • 1/2 c mayonnaise
  • 1/2 c sour cream
  • 1 t Lawry's seasoned salt
  • 1/2 c red grapes, cut into fourths
  • 1/2 c pecan pieces

Instructions

Chop celery and grapes.

Add chicken, celery, grapes and pecans to bowl.

Add half the mayo and half the sour cream and stir well.

Add the rest of mayo and sour cream until you have the consistency you want.

Season with Lawry's.

Refriegerate until ready to serve.
