5 Summer Salads You Should Make ASAP

These 5 summer salads you should make ASAP will help keep you cool, healthy and out of the kitchen!

Happy 1st day of summer! I love summer time so much. Picnics, swimming pools, cookouts and slower days are so wonderful. But sometimes it’s just too hot to cook and also, I crave something lighter. Here are some of my favorite salads that make a great lunch or dinner.

Tortellini pasta salad. This pasta salad is so easy to make and it’s very filling! Perfect for a warm summer night. Plus, it’s great for a picnic!

Pear Salad with Gorgonzola and Walnuts. This salad is so full of flavor and texture. You can add bacon or rotisserie chicken to it and you are good to go!

Shrimp, Arugula and White Bean Salad. Another quick and easy, but full of flavor salad. This one is perfect if you are trying to do a Mediterranean diet.

Orzo Salad. You do have to cook the orzo for this salad, but it’s still light and flavorful and doesn’t involve the oven.

Healthy and Easy Chickpea Salad. If you’re looking for a super healthy, vegetarian option, this chickpea salad is so delicious. It’s full of protein and packed with flavor and texture.

As I always say, you can use these recipes as a base and just experiment with substituting different ingredients that sound good to you. Use a different type of cheese, nut, fruit, salad green, etc. to customize it for you and your family. Spend less time in the kitchen and more in the backyard or at the pool soaking up the sun!
