Flavorful Crockpot Carnitas

Flavorful crockpot carnitas are easy to put together and they can cook all day while you are away. They are a great way to feed a crowd!

I found this recipe a couple of years ago and just really need to share it with you because it is just SO GOOD. This recipe makes a lot of meat, so it’s great for parties. In addition, it freezes well, so you can also use it for several meals.

Carnitas are just Mexican pulled pork. You need a pork shoulder roast (it may also say pork butt). They both come from the shoulder area of the pig and are great for slow cooking. This meat turns out tender and delicious

You will need:

  • 4-5 lbs pork shoulder (or butt) roast
  • 5 cloves garlic, peeled and roughly chopped
  • 1 T salt
  • 1 t cumin
  • 1 t chili powder
  • 1 t oregano
  • 1 t black pepper
  • 1/2 t cayenne pepper
  • juice of 2 limes
  • 1/2 c orange juice
  • 12 oz beer
  • 1/2 c salsa

Put the meat in the crockpot. Combine all the seasonings together in a small bowl, then rub them into the meat.

Add the garlic, orange juice, beer and salsa to the crockpot. Cover and cook on low for 8 hours.

After 8 hours, remove the meat from the crockpot and shred, getting rid of excess fat. Put the meat back into the juices and let sit for another half hour or so.

Just before serving, place the meat on a baking sheet along with about 1/4 c of the juices. Put it under the broiler of your oven for 5-10 minutes or until you have “crispy edges” on the meat.

Serve with flour or corn tortillas, avocados, red onion, cilantro, sour cream, and lime wedges.

Ingredients
