Crockpot Spicy Beef and Peppers

Thin slices of beef and colorful peppers make this crockpot spicy beef and peppers dish a great dinner that you can let cook all day. Serve over rice or even egg noodles if you prefer.

I am a big fan of crockpot dishes. Start it in the morning and then very little effort later to get a nice meal on the table. This is especially nice if you are working all day and then maybe have guests coming over.

I love this dish because it tastes great and also looks beautiful. It’s also super easy to put together, which is always a plus. My grocery store just happened to have some beef already thinly sliced and packaged the day I made this dish. But if your store doesn’t, you can just buy some beef chuck and ask the butcher to slice it for you. Or, you can do that yourself.

Also, you can use whatever colors of peppers you prefer. I like to use a variety because it makes the dish more colorful, but use whatever you like!

Here’s what you’ll need:

  • 2 lbs beef chuck, sliced thin
  • 2 cups bell peppers (green, yellow, red or orange) cut into about 1 inch squares
  • 1/2 medium onion, thinly sliced
  • 1 c beef broth
  • 2 cloves of minced garlic
  • 1/3 c fresh parsley chopped (optional)
  • 2 t salt
  • 1 t black pepper
  • 3 t sriracha (you can adjust this if you need a little less spice)
  • 1/2 c water
  • 2 T corn starch
  • Prepared rice for serving

Cut up the peppers and onion. If you didn’t buy the meat already sliced, slice it into thin strips.

Place the meat in the bottom of your crockpot. Top with the onions and peppers, then sprinkle with salt and pepper. Add the minced garlic.

Mix the beef broth with the sriracha in a small bowl, then pour it over the top of the meat and vegetables. Cook on high heat for 3-4 hours or low for 6-7 hours.

Before serving, stir together a 1/2 c cold water and 2 T cornstarch until thoroughly mixed. Take a cup of liquid out of the crockpot and add it to the cornstarch mixture in a small saucepan. Bring to a boil over medium heat and let cook for 2 more minutes after it starts to boil. Add this back into the crockpot and stir. Sprinkle with chopped parsley.

Serve over prepared rice or egg noodles.
