Cheesy Potato Breakfast Casserole

This cheesy potato breakfast casserole is so easy and flavorful. Perfect for a weekend breakfast or brunch!

I love breakfast foods! But it needs to be later in the morning or even for dinner. This casserole such a crowd pleaser. You can make it when you have guests and they can have it whenever they want. It’s really great right out of the oven, room temperature, or it reheats perfectly.

You can also make this the night before. Just cover with foil or plastic wrap and store in the fridge. Pull it out of the fridge about a half hour before you want to bake it. You can use Italian sausage or just regular breakfast sausage. If you like it spicy, use spicy sausage.

Not a sausage fan? You could totally substitute crumbled bacon if you prefer.

You’ll need:

  • 20 oz frozen diced hash browns, thawed
  • 1 lb sausage (you can use Italian or regular breakfast sausage)
  • 1 medium onion, chopped and sauteed in sausage grease
  • 7 eggs
  • 1/2 c milk
  • 8 oz grated cheddar
  • salt and pepper to taste

Preheat oven to 350. Spray a 9×13 pan with non-stick spray. Cook sausage, crumbling as you cook it. When it is fully cooked, remove from the pan and set aside. Cook the onions in the sausage pan until they are starting to be a little translucent and browned.

In a large mixing bowl, whisk the eggs and milk with salt and pepper. I suggest about 1 t of salt and 1/2 pepper. Add the sausage, onions, hash browns and one cup of the cheddar to the egg mixture. Mix everything together thoroughly.

Pour into prepared dish and bake for 35 minutes. Remove from oven and top with the other cup of cheese. Return to the oven for 6-8 mins. Let sit for 15 minutes before serving.
