Super Easy and Versatile Fritatta

 

 

This versatile fritatta recipe is easy and nutritious.  You can change up the ingredients you add to it and totally change the flavors.  Another good thing about a fritatta is that it’s great hot, room temperature, or even cold.  Fritattas are great for any meal. Today, I am making an Italian version, but I will give you ideas for some variations and you can go from there and create your own!

You’ll need:  10 large eggs, extra virgin olive oil, a chopped onion, green and red bell peppers, diced, 1 lb Italian sausage, 1/2 c milk, mozzarella cheese, parmesan cheese, salt and pepper.

I make my fritattas in my cast iron skillet, but you can also use any skillet that can go into your oven. Preheat the oven to 350. First, I cooked the Italian sausage, drained the fat, and set it aside.  Then I cooked the onions and peppers in 2 T extra virgin olive oil for just about 3-4 minutes – just to soften them a bit.  

 

 

 

 

 

 

Next, I mixed 10 eggs with 1/2 c milk, salt, pepper and a little parmesan cheese (probably about 1/4 cup).  

 

 

 

 

 

 

I typically would use a little shredded mozzarella cheese, but I didn’t have any, so I sliced about four thin slices to throw into the fritatta.

 

 

 

 

 

 

Now, put your peppers, onion and sausage into the skillet.  Then pour the egg mixture on top and add the mozzarella (you can leave this out if you’d like).  Cook it on medium heat on top of the stove for 5-7 minutes or until you see the edges start to pull away from the skillet.  

 

 

 

 

 

 

Next, place it in the preheated oven and bake for another 16-18 minutes or until set and lightly browned.  

 

Slice and serve!  

 

 

 

 

Additionally, here are some great variations to try as well.

Add zucchini or asparagus instead of or in addition to the peppers and onions.  Leave the sausage out for a delicious vegetarian option.  

Add about 1/2 c feta cheese, a T of chopped fresh dill and baby spinach to make a Greek version.  

Add some green chiles and/or jalapenos,  cheddar cheese and chorizo for a Mexican version.

Add chopped cherry tomatoes, avacado, bacon bits and blue cheese for a Cobb version.

Ingredients

  • 10 large eggs
  • 1/4 c parmesan cheese
  • 1/2 c mozzarella, shredded
  • 1 lb Italian sausage
  • 1/2 onion, chopped
  • 1/2 green and red bell pepper, chopped
  • 2 T extra virgin olive oil
  • 1/2 c milk
  • salt and pepper to taste

Instructions

Brown Italian sausage, drain and set aside. In cast iron skillet or any oven proof skillet, saute the onions and pepper in 2 T extra virgin olive oil for about 3-4 minutes or until slightly softened.

In a separate bowl, whisk together the eggs, milk, salt, pepper and cheeses. Add the sausage to the peppers and onions, then pour the eggs over the top. Cook on the stovetop on medium heat for 5-7 minutes or until the edges start to pull away. Then bake at 350 for 15-18 minutes or until set and slightly brown.
