Cauliflower Casserole

Cauliflower is not one of my favorite foods.  I am definitely not a picky eater, in fact, I can probably count on one hand the foods that I absolutely won’t eat.  When my kids were a lot younger, I decided to go all “southern girl” and make up a casserole recipe with cauliflower in it that they would (hopefully) eat.  It worked for most of them and actually ended up being my one of my oldest daughter’s favorites.  In fact, on cooking day for the blog, she came over and said “I love this and you haven’t made it in forever!”  

For some reason, this dish reminds me of fall, so I thought I would share.  If you or someone you love doesn’t love cauliflower, maybe this will work for you too!  

Start out by cutting a whole head of cauliflower.  You can leave it in pretty big pieces at this point because you are going to cook it and then it will be super easy to chop.

 

 

 

 

 

 

I just put it in boiling water until it was pretty tender, but you could also steam it if you prefer.

 

 

 

 

 

 

Once it’s tender, (just stick a fork or knife in it and if it goes in easily, it’s ready) drain it and then roughly chop it into small pieces.  This is how mine looked at this point. 

 

 

 

 

 

Put the chopped cauliflower into a casserole dish and add one cup of cooked rice.

 

 

 

 

 

 

 

 

Next, add about a cup of sour cream, a can of chopped green chiles, and anywhere between 1-2 cups of grated cheese.  You can use any kind of cheese you want.  I used Mexican, but you can use cheddar or mozzarella, or a combination.  Just use whatever kind of cheese sounds good to you!  I also added a chopped jalapeno because I and my family are crazy about lots of flavor and spice.  This is totally optional.  The chiles don’t really give it heat, but they add lots of flavor.

 

 

 

 

 

 

 

 

I mixed cheese into the mixture and then also put a little cheese on top, because why not?

 

 

 

 

 

 

Bake at 350 for about 30 minutes or until it looks all bubbly and delicious.  

 

 

 

 

 

 

Gather your family and friends around the table and serve this with whatever else your heart desires.  Never underestimate the significance and beauty of sitting around the table connecting or reconnecting with people you love.

Ingredients

  • 1 head cauliflower
  • 1 cup rice, cooked
  • 1 small can chopped green chiles
  • 1 chopped jalapeno (optional)
  • About 1 cup sour cream
  • 1 1/2-2 cups of whatever kind of shredded cheese you like

Instructions

Cook the cauliflower in boiling water (or steam it if you prefer) until tender. Chop into small pieces.

Add cauliflower, rice, chiles, sour cream and cheese and mix well. Add more cheese on top.

Bake at 350 until hot and bubbly (about 30 minutes).
