Oatmeal Butterscotch Cookies

Oatmeal butterscotch cookies have all the flavors of fall and are so yummy!  They are perfect for a Halloween party!

If you’ve read my blog very much, you know by now that I love fall.  Actually, from about September 1 all the way to the end of the year is my favorite time.  Oatmeal butterscotch cookies have to be made at my house during September and October.  They remind me of festivals and hay rides and apple orchards and pumpkin patches.  They are the favorite cookie of a few of my family members.  This is not an original recipe – it’s actually on the back of Nestle toll house butterscotch morsel package.  It has just become “my” recipe because I’ve been making these for years.

You’ll need:  All purpose flour, baking soda, salt, cinnamon, butterscotch chips, instant oats, sugar, brown sugar, eggs, and vanilla extract.  

Combine 1 1/4 c flour, 1 t baking soda, 1/2 t salt and  1/2 t cinnamon in a small bowl and set aside.

Beat together 1 cup (2 sticks) of butter, 3/4 c granulated sugar and 3/4 c brown sugar.  

 

 

 

 

 

 

 

Beat in 2 eggs and 1 t. vanilla.

 

 

 

 

 

 

Gradually beat in flour mixture.

Stir in the oats and buterscotch chips.

 

 

 

 

 

 

 

 

Your batter will look like this.  It might seem like an awful lot of oats, but trust me, it’s correct.  

 

 

 

 

 

 

Drop by rounded tablespoon onto ungreased cookie sheets.  Bake at 375 for 7-8 minutes for chewy cookies or 9-10 for crispier cookies.  I bake mine for 9-10, but it’s totally your preference.

Here’s the finished product.  A variation:  I have also added semi-sweet chocolate chips to this recipe.  It does give the cookies a different flavor, but I love the butterscotch and chocolate mixed!

Ingredients

  • 1 1/4 c all purpose flour
  • 1 t baking soda
  • 1/2 t salt
  • 1/2 t cinnamon
  • 1 c (2 sticks) softened butter
  • 3 c instant oats
  • 1 11 oz pkg Nestle Tollhouse Butterscotch Morsels
  • 1 t vanilla extract
  • 2 eggs

Instructions

Combine flour, baking soda, salt and cinnamon in a small bowl and set aside.

Mix together butter and sugars. Beat in eggs and vanilla.

Stir in oats and butterscotch morsels.

Bake at 375 on ungreased baking sheet. 7-8 minutes for chewy cookies. 9-10 for crispier cookies.
