Awesome Peanut Butter Snickers Cookie

Peanut Butter Snickers cookies – what’s not to love? I really love baking for my family and friends during the holidays.  I can’t even describe how delicious these are – you will just have to make them and find out for yourself.  These are perfect for a cookie swap too! You can prep them in advance and keep them in the fridge until you are ready to bake them. You can also freeze the dough and it will keep for a couple of weeks.

Ingredients

  • 1 cup Brown sugar
  • 1 cup White sugar
  • 3 cups Flour
  • Snicker’s minis
  • 2 Eggs
  • 1 cup Butter, softened
  • 1 t. Baking soda
  • 1 t. Baking powder
  • 1 cup Peanut butter
  • 2 t. Vanilla

Mix the peanut butter and both sugars until they are thoroughly mixed. Next, add the eggs and vanilla and beat until it’s well mixed.

Whisk the flour, baking powder and baking soda together in a separate bowl. This process really does help make your cookies the right texture. It’s the same result as sifting the flour.

Mix the flour mixture into the peanut butter mixture until you have a smooth dough to work with.

The next step is to take about a tablespoon of dough and wrap it around the candy bar. Make sure you get the mini size and not the fun size. Wrap the dough around the Snickers until it is completely covered by dough and forms a ball.

Place the cookies on an ungreased cookie sheet and bake at 350 for 10-12 minutes.

Let the cookies cool a bit while you make this super simple frosting, because let’s make this cookie even better.

The icing is this simple: Mix 1 cup confectioner’s sugar, 2 T unsweetened cocoa powder and 2 T milk. Whisk this together until you have a smooth icing. You can add a tiny bit more milk if it seems too thick .

Spread a little circle of frosting on the cookies when they are cool. Be sure to let the frosting dry before you put the cookies in any kind of container. If you want them to look extra fancy, chop up a couple of the snickers into little pieces and put them on top of the frosting before it dries.
