These super flavorful breakfast fajitas are easy to put together and very versatile. You can add any toppings you want to make them your own. The eggs are cheesy and creamy and the vegetables have the perfect amount of crunch. The toppings just add more flavor.
I really, REALLY love breakfast. I love it in the morning, for brunch, or even for dinner. However, with breakfast foods, variety can be a challenge. Breakfast burritos are in my rotation, so I thought that breakfast fajitas should be too. This recipe is so versatile because you can add meat to it and really just any toppings that sound good to you. So if you want to cook up some bacon or sausage or even steak to add to these – go for it!
You’ll need: 8 large eggs, 1 T butter, 2 bell peppers (any color you want), 1 sweet yellow onion, shredded monterey jack cheese (could substitute cheddar), fajita size flour tortillas. You will also want to have whatever toppings you’d like to use.
First, slice your peppers and onions into strips. Next, whisk together the eggs with about a tablespoon of water or a splash of milk and set about a 1/2 teaspoon of salt and set aside. You can add black pepper and any other seasonings to the eggs if you want.
Now melt the butter in a non stick skillet on medium to medium high heat. When the butter is melted, add the peppers and onions. Cook them until they are softened – about 4 or 5 minutes. Remove the peppers and onions with a slotted spoon to a plate. Then add the eggs and cook them for about 2 minutes, stirring them often. Stir in the cheese until it is all melted into the eggs.
Heat the tortillas either in the oven or microwave. Now you are ready to assemble your fajitas! Divide the eggs and vegetables among 6 or 8 tortillas. Last but not least, top them with whatever you’d like. You can stop with just the eggs and veggies, but toppings are only going to make them more flavorful. My suggestions for toppings are salsa, avocado, fresh cilantro and sour cream. You can also use fresh diced tomatoes or guacamole. Really, just top them with anything your little heart desires.
