Easy and Hearty Shepherd’s Pie

Easy and hearty shepherd’s pie is perfect for cold winter nights. It’s filling and cozy and delicious. In addition, most of it can be assembled the day before!

Shepherd’s pie is one of those cozy winter go to dishes for me. It’s not hard to put together and it’s pure and simple comfort food. I don’t claim that this is the traditional Irish way to make it. I just made my own version by pulling from a few different recipes and I really love this result. Feel free to add other veggies to the meat mixture if you want.

Here’s what you need:

  • 1 lb ground beef (may also use turkey)
  • Small onion, chopped
  • 1 15 oz can tomato sauce
  • can whole kernel corn
  • 4-6 potatoes
  • 1/2 c milk
  • 4 T butter, softened
  • 1/2 c sour cream
  • 2 c Bisquick
  • 1 c milk
  • 2 T butter, melted
  • 1 cup shredded cheddar cheese
  • salt and pepper

You’re going to be assembling three different layers. The first two can be done ahead of time.

For the mashed potatoes. Peel and wash the potatoes and slice them. Boil them until they are easily pierced with a fork. Drain them and place in a large bowl. Using a hand mixer, whip the potatoes with 4 T butter, 1/2 c milk and 1/2 c sour cream until smooth.

For the beef layer. Saute onions and ground beef or turkey until the beef is thoroughly browned. Drain excess fat. Place back in pan and add tomato sauce, corn (and any other veggies you want at this point), salt and pepper. Let simmer together for about 5 minutes.

For the crust. Combine the bisquick and 1 c milk together with a whisk. This will be very thin.

To assemble, spread the mashed potatoes in an even layer in the bottom of a 9 x 13 inch pan. Next, sprinkle the cheddar cheese on top of the potatoes. Add the beef layer and spread over the potatoes and cheese.

Finally, pour the bisquick and milk mixture over the top and spread evenly. Melt 2 T butter and pour over the top of the crust layer.

Bake at 350 for 35-45 min or until the crust is golden brown. To serve, cut into squares and use a spatula to scoop out the servings.

Ingredients

Instructions

For mashed potatoes layer - peel, wash and slice potatoes.

In a large bowl using a hand mixer, whip together potatoes, 4 T butter, 1/2 c milk and 1/2 c sour cream until smooth.

For beef layer - saute onions and ground beef until beef is completely browned.

Add tomato sauce, corn (and any additional veggies you want) and salt and pepper to taste.

Let simmer for about 10 minutes.

For topping layer - whisk together bisquick and 1 c milk until smooth.

To assemble - spread the mashed potatoes in an even layer on the bottom of a 9 x 13 dish.

Sprinkle cheddar cheese over the potato layer.

Spread beef mixture over the top of the cheese and potatoes.

Pour the bisquick mixture over the top, smoothing it out to cover everything.

Melt 2 T butter and pour over the crust layer.
