Watermelon Salad with Feta and Mint

Watermelon salad with feta, mint, red onion and a lime dressing is the perfect combination of refreshing, sweet and savory!

A few years ago, I had a watermelon salad as part of the summer menu for a really fun restaurant experience called Mangia. They have just one menu for each season, and you can go on Friday or Saturday night and have a family style “feast” and it’s amazing. Anyway, when I saw it on the menu, I was most definitely skeptical. But when I tried it, I couldn’t believe how much I loved all the flavors involved. My inspiration for this recipe came from that dish.

I absolutely love watermelon. It’s definitely one of my staple summertime foods. I try to keep it in my fridge all the time all cubed up and ready to eat. Now I will be using some of that for this salad. It’s perfect for picnics!

You’ll need:

  • About 5 cups of cubed watermelon
  • 1 cup of diced cucumber
  • About 1/4 c thinly sliced red onion strips
  • 1/3 cup finely crumbled feta cheese
  • 1/3 cup torn mint and/or basil leaves
  • Additional options: could add a diced jalapeno or avocado
  • For lime vinaigrette: 2 T olive oil, 2-3 T lime juice, 1 clove minced garlic, pinch of salt

First, mix up the lime dressing and set aside.

Next, just assemble all the ingredients in a large bowl or platter and drizzle the dressing on top and stir it all up! You can eat it right away, but it definitely gets better if it sits in the fridge for at least an hour or two so that all the flavors can get really combined.

This is one of those recipes that you really just have to try. It sounds very odd to mix all these things together, but I think you’ll be pleased with the outcome!
