Quick and Easy Cannellini Bean Dip

This cannellini bean dip is quick and easy and best of all, delicious! Make this in your food processor or blender in just a couple of minutes, refrigerate for a bit, and enjoy!

For me, summertime means lots of picnics and dinners on the back porch. I’m always trying to come up with new ideas of things to pack in our picnic basket. This dip is just so easy to make and such a great addition to a picnic. It’s similar to hummus, but with a little bit different flavor. You can serve it with any kind of crackers or raw veggies. Also, I think it could be a delicious spread on a sandwich with peppers, cucumbers, tomatoes and whatever other veggies you like. In fact, I think I will be trying it that way very soon.

I recommend making it a day ahead of time to give the flavors plenty of time to blend together. It just gets better and better!

  • You’ll need: 2 cans Cannellini beans, drained and rinsed (I used canned beans for this, but you can also cook your own if you prefer)
  • 2 T olive oil
  • 2 T fresh lemon juice
  • zest of a lemon
  • 1 clove garlic, minced
  • 1/2 t salt
  • 1/4 t pepper
  • 6-8 basil leaves, torn (may use dried basil – 1/2 t)

First, drain and rinse the cannellini beans with cold water.

Next, place all the ingredients into a food processor or blender and slowly add some water (1-2 T) while processing, until smooth and the consistency that you want. It should be about the consistency of hummus, so be careful not to add too much water. Refrigerate for a couple of hours if possible before serving.

How’s that for a quick and easy recipe that is delicious and healthy?

For serving, you can add extra lemon zest and/or fresh herbs on top if you’d like. Serve with any combination of crackers and raw veggies that you prefer.

Ingredients

  • 2 cans Cannellini beans, drained and rinsed (I used canned beans for this, but you can also cook your own if you prefer)

Instructions

Rinse and drain cannellini beans.

Place all ingredients into a food processor or blender.

Process until smooth, slowly adding 1-2 T water if needed to get the consistency you prefer. (should be about the consistency of hummus)
